Ingredients:
4 cups rolled oats
2 cup almond butter (peanut butter works great too!)
1 cup canned pumpkin puree
1 tsp Salt
2 teaspoon pumpkin pie spice (alternatively, you can use 1 tsp cinnamon + 1 tsp nutmeg)
1/2 cup maple syrup
2/3 cup apple butter
1 cup chocolate chips
1 cup roasted pumpkin seeds
¼ cup portion of cookie dough
Directions:
Preheat oven to 325°F (163°C). Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
In a large bowl, combine oats, salt, and cinnamon.
Add almond butter, maple syrup, apple butter, and pumpkin puree. Mix well.
Stir in chocolate chips and pumpkin seeds.
Chill the mixture for minimum 30 minutes.
Using a ¼ cup measuring cup, scoop into balls and place on parchment-lined baking sheet. Gently press down and mold each cookie into your desired shape. They will not spread much in the oven.
Bake for 15-18 minutes or until edges are slightly browned. Cool on a wire rack before storing.
Store in an airtight container in the refrigerator up to 10 days, or freeze up to 3 months.
